The Director — our proprietary approach to direct-over-coals cooking.
From our earliest inspiration, the objective was simple: give the backyard cook and the commercial pit-master unmatched control inside a stable, highly responsive cooking environment.
The Director began with road trips, research, and countless in-person conversations with some of the country’s most accomplished direct-heat cooks beginning in 2021. Before entering the category, we wanted to understand the craft, determine whether we belonged in the space, and most importantly, identify where we could bring meaningful value to a style of cooker that has remained relatively unchanged for generations.
The result is The Director.
Every detail was developed around control. The cook can manage heat, distance from the coal bed, color development, texture, and the rate at which food finishes. That control allows the fire and the food to arrive at the finish line together — with the color, bark, tenderness, and doneness the cook intended.
The Director gives the pit-master the responsiveness of cooking directly over a live coal bed while providing the stability and precision required to repeat the result cook after cook.
Available as a freestanding cooker on heavy-duty casters or mounted to a trailer through our sister company, Primitive Pits, The Director is equally at home in the backyard, restaurant, catering operation, or competition environment.
Each Director is finished in a high-temperature clear coat that leaves the fabrication and character of the steel visible.
